Eating well doesn’t have to be complicated, nor does it require extensive cooking skills. Check out my “blast from the past” dinner! At only 477 calories, this updated school lunch was filling and figure-friendly. It’s also well-balanced, as it provides whole grains and fiber from the Ezekiel bread and carrots, healthy poly- and mono-unsaturated fats from the peanut butter and sunflower oil, and protein from the yummy organic peanut butter.
