Eating Well Doesn’t Have to Be Complicated


Eating well doesn’t have to be complicated, nor does it require extensive cooking skills. Check out my “blast from the past” dinner! At only 477 calories, this updated school lunch was filling and figure-friendly. It’s also well-balanced, as it provides whole grains and fiber from the Ezekiel bread and carrots, healthy poly- and mono-unsaturated fats from the peanut butter and sunflower oil, and protein from the yummy organic peanut butter. The inclusion of a fruit (fruit spread) and vegetables (carrots and potatoes) rounds out this tasty entrée that will take you back to your school days. This just proves that Momma did know best!
