Clean Cauliflower Soup(With Red Peppers, Carrots, & onions

Check out this figure-friendly recipe that is sure to keep you cozy on called cold autumn nights! This soup is hearty enough to be an entrée and tastes scrumptious when topped with a sprinkle of cheese or Greek yogurt.


-2 Red Peppers

-1 Head Cauliflower (cored and diced)

-1 1/2 Cups Diced Carrots

-1 Medium Onion

-4 Cups Chicken Stock

-2 tbsp. Oil (I used coconut)

-1 tbsp. Garlic Salt

-1/2 tbsp. Black Pepper

-1 tsp. Cumin

-3 Cups Skim Milk (or milk substitute)

Place diced red peppers, cauliflower, carrots, onion, and chicken stock in a blender. Puree until smooth. Place puree in a large pot over medium heat. Add oil. Heat through. Add salt, pepper, and cumin. Simmer over medium-low until substance starts to thicken. Add milk and simmer until hot. Enjoy!

*Sodium can be reduced by using low-sodium chicken or vegetable broth and fresh garlic.
